Sweetcorn Fritters with Spicy Chunky Salsa

These crispy sweetcorn fritters are a lovely sharing recipe if you have friends coming over – simple and quick to prepare too!

For the fritters
3 tbsp Mazola Corn Oil
325g frozen sweetcorn kernels
2 eggs, beaten
100g plain flour
1 tsp baking powder
1 spring onion, finely sliced
1 red chilli, finely chopped
10g coriander, chopped

For the salsa
1 avocado
2 salad tomatoes, finely diced
1 red pepper, deseeded and diced
1/2 lime, juiced
4 tbsp Mazola Corn Oil
Salt and pepper to taste

Step 1

Set the Mazola Corn Oil to one side and combine all of the fritter ingredients in a large bowl – mix thoroughly until thick

Step 2

Warm a large frying pan with the Mazola Corn Oil

Step 3

Drop dessert spoonfuls of the fritter mixture into the warm oil with enough space in between to turn them. Cook for two minutes each side on a medium heat until golden brown and crispy

Step 4

Combine all of the salsa ingredients in a bowl and mix well

Step 5

Serve the hot fritters with a side bowl of salsa and eat immediately
